Chinese: Hacked Chicken with Garlic and Ginger

(serves 6)
Ingredients:
- 6 chicken thighs with skin and bones
- 1 tablespoon chicken base
- Water
- 1 tablespoon salt
- Raw ginger and green onion slivers for garnish (optional)
Sauce ingredients:
- 2 teaspoons spicy chili crisp
- 1 bunch green onion, chopped (white part only)
- 1 tablespoon agave nectar
- 1 teaspoon rice vinegar
- 1 cup “Garlic Ginger Sauce” (see master recipe)
- ¼ cup rice wine or water
Procedure:
- Add chicken to a large pot
- Add enough water to cover the chicken
- Add chicken base and salt
- Cover pot, bring water to a boil, then turn down heat and simmer approx 20 min (or until chicken is done)
- Drain and let chicken cool until it reaches room temperature
- Make the sauce: saute chili crisp and scallions in a saucepan until soft; turn off heat, stir in all other ingredients; set aside
- Using a cleaver, hack the chicken into bite size pieces
- Transfer chicken pieces to a serving plate, pour sauce over chicken
- Garnish with ginger and green onion slivers (if desired)
