Chinese: Hacked Chicken with Garlic and Ginger

Procedure:

  1. Add chicken to a large pot
  2. Add enough water to cover the chicken
  3. Add chicken base and salt
  4. Cover pot, bring water to a boil, then turn down heat and simmer approx 20 min (or until chicken is done)
  5. Drain and let chicken cool until it reaches room temperature
  6. Make the sauce: saute chili crisp and scallions in a saucepan until soft; turn off heat, stir in all other ingredients; set aside
  7. Using a cleaver, hack the chicken into bite size pieces
  8. Transfer chicken pieces to a serving plate, pour sauce over chicken
  9. Garnish with ginger and green onion slivers (if desired)
